Schools in competition :
- Lycée Hôtelier Savoie Léman

Start of the competition at 9.00 am - service at 12.30 pm - end of the competition at 2.30 pm - end of marking at 2.45 pm.

- THE DISH: The candidate must prepare a stuffed saddle of lamb accompanied by a lamb jus and two different garnishes. One with a kasha base and the other with a mushroom base. The team will have to create a collective garnish based on root vegetables, served in foil and opened.

- THE ASSIETTE DESSERT: Autumn-flavoured Baba.
The candidate will have to make 8 plated desserts consisting of Baba (savarin pastry) soaked in syrup. The babas must be made up of a cream filling, a flowing centre and a crisp.
The chef de rang and the pastry chef will design the babas around seasonal fruit and a tableware technique (flambé, coulis, sauce, etc.).

- TABLE ARTS EPREUVE: The candidate will have to set up a round table 120 cm in diameter for 4 covers on the theme of water.

- BAR EVENT: in 10 minutes, the candidate will have to make an aperitif cocktail with alcohol for one person.
