Challenge des Mains d'Or

Description

The Professional Chamber of Pastry and Ice Cream Makers of Haute-Savoie and the town of Thonon-les-Bains are organising the Challenge des Mains d'Or competition as part of the Toques en Chablais International Gastronomy Festival.

* THE CHOCOLATIERS' CHALLENGE - NOEL THEVENOD / 9am-12pm
Candidates will have 3 hours to assemble a piece of chocolate 90cm high by 30cm wide and no more than 30cm deep, to be used as a display stand for 5 organic and sustainable chocolate sweets supplied by the candidates.
Candidates must bring a technical sheet proving the origin of the supplier or plantation chocolate, and explain their approach to the jury and the public in order to promote the chocolate of tomorrow from plantations.

* THE APPRENTICE PASTRY CHEF CHALLENGE / 1pm-5pm
Candidates will have to make 10 religieuses, 5 for tasting and 5 to be presented on a nougatine base over a period of 2 hours.

* THE PAUL COLLET CHALLENGE - ARTISTIC SUGAR PIECE / 8am-12pm
Candidates will have to bring along a sugar art structure and finish it on the spot in front of the public. Candidates will then have 3h30 to work using three different sugar art techniques of their choice.

* THE ICE SCULPTURE CHALLENGE / 1pm-4pm
Candidates will have to create an ice sculpture to support an ice-cream tart brought in by the candidates over a period of 1h30.

* THE BTM CROQUEMBOUCHE CHALLENGE / 1pm-4pm
The event will take place in teams of two BTMs over a period of 2 hours:
The teams will have to make a croquembouche of 60 to 80 choux, the choux pastry, nougatine and uncoloured pastillage will be brought and assembled on site.
The first team member to start the competition will have 50 minutes to begin making the sugar croquembouche. At the end of the 50 minutes, he/she must hand over to his/her team-mate.
The second team member will then have 50 minutes to continue making the croquembouche or sugar art.
Finally, the pairs will have 20 minutes to finish assembling the croquembouche.
