As you enter the emblematic “Napoléon” and “Charles Arnaud” cellars, you'll discover how the stone vaults of the Fort des Rousses provide an exceptional cellar environment for ripening JuraFlore Comtés, thanks to natural air movement and a fantastically stable climate.
Discover how the Master Refiner, through his daily care, succeeds in revealing the incredibly fine, complex flavors for which Juraflore Comtés are renowned. He watches over his cheeses and guides them from cellar to cellar, each with its own ecosystem. They remain there for a minimum of 12 months.
